La Subida is a Country Resort surrounded by the greenery of the vineyards and woods of the Collio Goriziano. Its origin is the result of the dream idea that Josko and Loredana had when they were young in the 80s. First, they qualified and enhanced a simple country osteria, making it an example and a point of reference of the culinary evolution of the territory, and after they gave hospitality here in the Collio during the time in which it was becoming, with the success of its wines, internationally known.
Today it means the warm hospitality of the Sirk family, with the trattoria al Cacciatore, able to bring together Slavic and Latin cuisine and to give inspiration and nobility to its peasant origin, and its complete wine cellar.
The simplicity of the osteria, with the fires, the representations of the wild animals there were once, the young and informal management. To have a relaxing holiday spot, the comfortable houses of the village, the stimulating offer to stay there, the relax in the woods, among ferns, the surroundings organized for curious and demanding hosts make Subida a unique place.
Point of reference and occasion to know better Collio and the surroundings. You can do it by bike, by a funny yellow Vespa or driven on a Rover.
The scenic vinegar cellar where Josko produces wine vinegar from whole grapes, but also cheese aged in pit and in hay made the mountain cottages of Prealpi Giulie and much more.
